The Price of Gas How long can I keep an open wine before it starts going bad? We get this question at least twice a week and there isn't just one answer. Some wines have longer shelf lives than others after being opened. For example, most Ports can maintain their structure over weeks and oftentimes get even better. Most wines will always be best the day you open them, but we realize there are plenty of people that enjoy a single glass of wine and have three quarters of a bottle re-corked on their counter as they head to work the next day. Bottom line is, oxygen is the mortal enemy of wine and re-corking the bottle is not an airtight seal so the second you set that bottle on the counter, oxidation begins. You've paid good money for this bottle of wine and it needs to be experienced as the winemaker intended, not as the winemaker intended PLUS two days of deterioration. The two most popular methods of preserving wine are the wine pump which sucks the air out of the half empty bottle, and wine spray which is compressed gas in a can. The pump works just fine but we prefer "Wine Life" spray which is a mixture of inert gases that are heavier than oxygen. You spray it in the open bottle for a couple seconds and then put the cork back in the bottle. The gas lays on top of the wine, separating it from the oxygen and preserving the wine for up to a week (the can says 10 days but that's pushing it). We use "Wine Life" at our bar offer it for sale at $5.99/can (120 uses per can). Of course, as many of our customers have pointed out, you may have no need for a wine preservation system because your wine bottle is always empty. We can relate.

I Come From the Land Down Under: Australian Wine Tasting This Friday the 7th 5:30-8:30pm $15/person 5 wines, cheeses, crackers, breads Reservations recomended: info@cowineco.com or (323) 478-1985 This Friday we'll be pouring some old and new Aussie selections at the bar. We're also teaming up with Eagle Rock's own Blue Heeler Imports which specializes in bringing Australian boutique brands and accessories to the U.S. of A. Owner Shannon Bedell will be present at the tasting and has generously offered a $50 gift certificate which will be raffled off to one lucky wino. After the remarkable success of Yellowtail wines a few years ago, Australian wine exports boomed which was both good and bad. We got some really good deals on wine but suddenly there were so many copycats putting cute, furry critters on wine labels that it was hard to tell what was a good deal what was damn near vinegar. But that's why you trust your friendly neighborhood wine store folks, right? We've got some great new picks that we're excited for you to try (and maybe a little vegemite). We've got a few new bubblies in we're trying for the holiday season so forget the bills and the yardwork and the 42 square foot model trainset that winds through an exact, 1/4 scale reproduction of the Degobah System (or maybe that's just me) and get your butt to CoWineCo. Two Great Tastes That Taste Great Together: Port and Chocolate Tasting! Sunday, October 16th 1:00pm - 4:00pm $12/person 4 wines, cheeses, crackers, breads Not much needs to be said here other than, hey, we're tasting Ports and chocolates. I mean come on. If you don't like this tasting then you're either dead or a cyborg and if you're a cyborg then you're going to act funny at the tasting so we'll KNOW you're a cyborg and kick you out anyway.
