The Price of Gas, Two Great Tastes That Taste Great Together, and Which Wine Pairs With Vegemite?

***This email now goes out every two weeks, not every week.  See below for a schedule of the next two weeks of wine tastings***

The Price of Gas

How long can I keep an open wine before it starts going bad?  We get this question at least twice a week and there isn't just one answer.  Some wines have longer shelf lives than others after being opened.  For example, most Ports can maintain their structure over weeks and oftentimes get even better.  Most wines will always be best the day you open them, but we realize there are plenty of people that enjoy a single glass of wine and have three quarters of a bottle re-corked on their counter as they head to work the next day.  Bottom line is, oxygen is the mortal enemy of wine and re-corking the bottle is not an airtight seal so the second you set that bottle on the counter, oxidation begins.  You've paid good money for this bottle of wine and it needs to be experienced as the winemaker intended, not as the winemaker intended PLUS two days of deterioration.

The two most popular methods of preserving wine are the wine pump which sucks the air out of the half empty bottle, and wine spray which is compressed gas in a can.  The pump works just fine but we prefer "Wine Life" spray which is a mixture of inert gases that are heavier than oxygen.  You spray it in the open bottle for a couple seconds and then put the cork back in the bottle.  The gas lays on top of the wine, separating it from the oxygen and preserving the wine for up to a week (the can says 10 days but that's pushing it).  We use "Wine Life" at our bar offer it for sale at $5.99/can (120 uses per can).

Of course, as many of our customers have pointed out, you may have no need for a wine preservation system because your wine bottle is always empty.  We can relate.

Meet the Artist and Ask Him Lots of Questions About Art

We wanted to quickly get Edward Sanders' art up on our walls but we never set a date for a proper opening.  Well, with one painting sold already we decided this Thursday should be the day so come on out, have some wine and cheese and meet the brain behind these beautiful and varied pieces spotting our walls.

This Thursday, October 6th

6:00pm - 8:30pm

Wine by the glass ranging from $4-$9

Cheeses, crackers and the ever so fancy mixed nuts

Wine Tasting Schedule

I Come From the Land Down Under: Australian Wine Tasting

This Friday the 7th

5:30-8:30pm

$15/person

5 wines, cheeses, crackers, breads

Reservations recomended: info@cowineco.com or (323) 478-1985

This Friday we'll be pouring some old and new Aussie selections at the bar.  We're also teaming up with Eagle Rock's own Blue Heeler Imports which specializes in bringing Australian boutique brands and accessories to the U.S. of A.  Owner Shannon Bedell will be present at the tasting and has generously offered a $50 gift certificate which will be raffled off to one lucky wino.

After the remarkable success of Yellowtail wines a few years ago, Australian wine exports boomed which was both good and bad.  We got some really good deals on wine but suddenly there were so many copycats putting cute, furry critters on wine labels that it was hard to tell what was a good deal what was damn near vinegar.  But that's why you trust your friendly neighborhood wine store folks, right?  We've got some great new picks that we're excited for you to try (and maybe a little vegemite).

Wines

Brookland Valley "Verse 1" Semillon/Sauvignon Blanc 2002, Margaret River, Australia

Torbreck Woodcutter's Semillon 2003, Barossa Valley, Australia

D'arenberg Stump Jump Red 2003, McLaren Vale, Australia

Rosemount Estate Mudgee Hill of Gold Shiraz 2003, Australia

Sunday Bubbly Sunday 3: Attack of the Bubbles

This Sunday the 9th

1:00pm - 4:00pm

$12/person

4 wines, cheeses, crackers, breads

Why change a good thing?  The first two bubbly tastings were so popular we decided to make it a regular occurrence.  We've got a few new bubblies in we're trying for the holiday season so forget the bills and the yardwork and the 42 square foot model trainset that winds through an exact, 1/4 scale reproduction of the Degobah System (or maybe that's just me) and get your butt to CoWineCo.

Wines

Sofia Coppola Blanc de Blanc Sparkling White, California

Duval-Leroy Cuvee Paris Non-vintage Brut, Champagne, France

Gruet Blanc de Noir Brut, New Mexico

4th sparkler to be announced (we're supposed to get a couple more in this week..we'll see!)

Blender? I Don't Even Know Her!

Friday October 14th

5:30-8:30pm

$15/person

5 wines, cheeses, crackers, breads

Reservations recomended: info@cowineco.com or (323) 478-1985

In this tasting we'll be focusing on red and white blends.  Whether its aroma, weight or taste, each grape plays a role in a blended wine.  Check back on our website next week for specific wine selections.

Two Great Tastes That Taste Great Together: Port and Chocolate Tasting!

Sunday, October 16th

1:00pm - 4:00pm

$12/person

4 wines, cheeses, crackers, breads

Not much needs to be said here other than, hey, we're tasting Ports and chocolates.  I mean come on.  If you don't like this tasting then you're either dead or a cyborg and if you're a cyborg then you're going to act funny at the tasting so we'll KNOW you're a cyborg and kick you out anyway.  Check back on the website next week for specific port selections.

Auntie Em's Fall Dinner!

Auntie Em's is having their 3rd Farmer's Market dinner this coming Tuesday, October 4th and Jen and I have paired specific wines for each course which you can pick up on your way to the dinner and open at Auntie Em's for no corkage! Here is this month's menu:

AUNTIE EM’S KITCHEN

EARLY FALL FARMER’S MARKET DINNER
FOUR COURSE DINNER, $28

STARTERS

BEET AND GOAT CHEESE NAPOLEON

Suggested Wine Pairing: Our Fiddlehead Sauvignon Blanc ($20.99) is a less citrusy, softer Sauvignon Blanc, dry enough to stay out of the way of the natural sweetness of the beets,  but with a good acidity for the goat cheese.  Or try:

Mosbacher Sauvignon Blanc ($20.99)

Murphy-Goode Reserve Fume Blanc ($14.99)

Avinyo cava ($15.99)

Gruet Blanc de Noir bubbly ($13.99)

APPLE, AVOCADO, WATERCRESS AND GRAPE SALAD
WITH A LIME VINAIGRETTE

Suggested Wine Pairing: We have a new, dry chardonnay – Uvas ($12.99) that would accent the apple and lime in this dish but won’t be too heavy for the greens.  An Italian alternative is our Elena Walch Pinot Bianco ($15.99) – its dry, lighty nutty flavor would pair well with the Avocado.

ENTREE (choose 1)

SLOW COOKED BEEF SHANKS
WITH A WILD MUSHROOM RAGOUT, OVER CABERNET MASHED POTATOES AND ROASTED BABY CARROTS

Suggested wine pairings: Any mushroom-accented dish is a great pair for a dry Pinot Noir or a Cabernet Sauvignon.  We suggest our Opolo Pinot Noir ($24.99),  or for a bigger, ‘darker’ pairing, try the Argentinian Finca Koch Cabernet Sauvignon ($20.99).

PAN SEARED WILD SALMON
SERVED OVER SAFFRON COUSCOUS,  TOPPED WITH A MOROCCAN GREEN SAUCE

Suggested wine pairings: Rose is such a great solution for the sweet/briny nature of salmon, which needs a bigger wine than other fish.  Our Grenache/Syrah Rose from Colioure, France is a big, juicy, but dry rose (Clos de Paulilles, $14.99) that fits the bill.

SMOKED PORTOBELLO MUSHROOM
WITH PARMESAN MASHED POTATOES, SAUTÉED SPINACH
AND ROASTED CHERRY TOMATO SAUCE

Suggested wine pairings: Either the Salmon or the Mushroom dish would be great with our Lynmar Russian River Pinot Noir.  ($24.99).  This is one of the silkiest Pinots we have but with a little fruit and minerality on the mid-palate to stand up to the heartiness of the potatos or the cous-cous.  Also, our Monte Antico Sangiovese  ($10.99) is a soft, dry, earthy choice for the Portabello in particular.

DESSERT
